Dinnertime!

I don't think I've ever had macaroni and cheese I didn't like, but there are none I love quite like this one... 

My mom has been making this for years since adapting it from The Good Housekeeping Cookbook "Eleven-Layered Casserole" (who would think that would be the name of the best mac&cheese ever?) from 1963, edited by Dorothy B. Marsh.  Here is her adapted recipe:

Ellen's Macaroni & Cheese

Ingredients:
8 oz. elbow macaroni, cooked
2 cups shredded cheddar cheese
1/2 tsp. salt
1/4 tsp. pepper
1/2 tsp. oregano
almost all of 1 can of evaporated milk (or about 9 oz.)
1 small onion, sliced (for flavor, not necessarily to eat)
about 1/4 cup parmesan cheese, grated


Directions:
1. Pre-heat oven to 375 degrees. 
2. Layer ingredients as follows:
     1/2 macaroni
     1/2 cheddar cheese
     1/2 onion slices
     1/2 spices
     1/2 evaporated milk
3. Repeat
4. Top with parmesan cheese

5. Cover and bake for 20 minutes
6. Uncover and bake for additional 10 minutes
7. Enjoy the tastiness!
